When you begin to slow down on one of Red Dead's horses, it moves into and keeps deceleration cycles running but waits for an input that can instantly transition that into an acceleration cycle. This concept became known as the 'Don't stop moving' principle internally, and even applied to stopping and starting. So Rockstar moved towards a system of continual acceleration and deceleration rather than one shots, continuous cycles or varying speeds and non-fixed transitions.
